Sauté in a pan with the garlic in the crock evo, delete it and cook the mushrooms with the potatoes, add the ginger and soy sauce, stir and cover with the broth. Bake for 15 minutes, let the soup rest for 5 minutes before serving and sprinkle with the chopped cilantro.
